Quinoa and Carrot Fritters and Chickpeas Salad

Quinoa and Carrot Fritters – Chickpeas Salad – Sour Cream - Apples 🍎 - Clementines 🍊 Crackers 

Quinoa and Carrot Fritters ingredients :

Quinoa - 1 cup
Carrot - ½ cup shredded 
Spring Onions - ½ cup chopped 
Egg - 2
Bread Crumbs - ½ cup 
Parmesan Cheese – 1/3 cup grated 
Coriander - 2 tbsp chopped
Garlic – 1 tsp minced 
Lemon juice - 1 tbsp
Salt
Pepper
Olive Oil for frying 

Method :

Mix all the above ingredients, make small patties and shallow fry them in Olive Oil on both sides till done. You can even swap the carrots in the patty mixture with shredded Zucchini or boiled Broccoli.

Tip:
The cooked patties can be made ahead and stored in refrigerator for up to 3 days. .
