TACO CUPS WITH MINCED BEEF & CABBAGE SLAW
INGREDIENTS :-
CABBAGE SLAW
Red /White cabbage shredded – 1 cup
Carrot grated -1/4 cup
Avocado cubes – 1
Lime juice- ½ tbsp
Mayonnaise – 1 tbsp
Honey ½ tsp
Salt
Black Pepper
For Assembling :-
Corn/flour Tortillas
Minced Beef cooked in tomato sauce
Sour Cream ( optional )
SERVING SIDES:-
Strawberries
Snow peas
Cherry Tomatoes
Babybel Cheese
METHOD :-
In a colander, put the shredded cabbage and sprinkle with salt and rub the cabbage with your hands to release all the liquid.
Let it sit for some time and drain.
Squeeze the excess liquid and transfer to a bowl.
Add the remaining ingredients and toss well. Serve the cabbage slaw in the avocado shell .
To prepare Taco cups, cut the tortillas into circles and press into greased muffin tin and bake till crisp
