Quinoa Salad
Ingredients :
Uncooked Quinoa 1 cup
Water 2 cups
Cooked Red Kidney Beans ½ cup
Cucumber
Sweet corn
Red onion
Parsley
Cherry Tomatoes
Salt
Pepper
Lemon juice 1/4 cup
Apple Cider Vinegar 1 tbsp
Olive oil ¼ cup
Method:
Rinse the Quinoa well in a fine mesh colander. In a pot combine the Quinoa and water. Bring to a boil and then cover the lid and let it simmer till the Quinoa has absorbed all the water. Remove from the heat and let it rest for 5 -10 min so that it fluffs up nicely.
In a bowl, combine the olive oil, lemon juice, vinegar, salt and pepper. Whisk until blended and set aside. Take another bowl, add in the cooled Quinoa, diced cucumber, red kidney beans,corn,chopped parsley,cherry tomatoes and drizzle the dressing on top. Toss until all the ingredients are well combined. This salad can be refrigerated up to 2 days.
